Keto Cinnamon Streusel Loaf

This is a yummy yeast bread with a sweet cinnamon streusel swirl.

Keto Cinnamon Streusel Loaf

Cinnamon roll delight in a loaf. Perfect for Christmas morning.

Ingredients

  • ¼ cup

    warm water

  • 1 tsp

    sugar

  • 1 pkg

    active dry yeast

  • 2 cup

    almond flour

  • ¼ cup

    golden ground flaxseed meal

  • ¼ cup

    Swerve, confectioners

  • ½ tsp

    baking soda

  • ½ tsp

    sea salt

  • 2 tbsp

    apple cider vinegar

  • 5 eggs
  • 3 tbsp

    cinnamon

  • 3 tbsp Swerve, granular
  • ¼ cup pecans, chopped

Instructions

  • Preheat oven to 350 and grease 8 x 4 loaf.
  • In cup, proof yeast with sugar and let set for 15 to 20 minutes.
  • In large bowl, mix dry ingredients – almond flour,
    flaxseed, powdered Swerve, baking soda, and salt. (I like using a standup mixer.)
  • In a separate bowl, mix eggs and apple cider vinegar. 
  • With mixer running add wet ingredients.  Continue mixing for about 2 minutes to
    develop yeast and create a smooth dough. 
  • Pour dough into loaf pan.
  • Mix cinnamon, granular Swerve, and pecans in a small bowl.  Sprinkle on top of loaf or swirl into the loaf.
  • Bake for 30 to 40 minutes. 

Notes

This recipe makes 10 slices with 179 cal, 8 Pro, 15 Fat, 5 Carbs, 3 Fib, 2 Net Carbs.
